From its rise in French cuisine as “sauce brune," it later developed sophisticated sauces, like espagnole, which is considered a foundational brown sauce in classical French cuisine.European settlers brought gravy-making techniques to North America, where they adapted recipes based on available ingredients. In colonial times, gravy was often a simple mix of fat, flour, and water, reflecting the resourcefulness of early American cooks. The Southern United States played a major role in shaping brown gravy into a comfort food icon. Here, it became richer and thicker, often made from fried chicken or sausage drippings, and served with biscuits or mashed potatoes. This version is deeply tied to soul food traditions, emphasizing warmth, family, and affordability.
