About the Recipe

Ingredients
· 1 TBSP olive oil
· 1 medium onion, diced
· 1 red bell pepper, diced
· 2 cloves garlic, minced (optional)
· 4 cups low-sodium chicken or vegetable broth
· 1 can (15 oz) black beans, drained and rinsed
· 2 cups mixed vegetables (such as corn, zucchini, or carrots)
· 1 cup cooked, shredded chicken or beef (optional for extra protein)
· 2 TBSP HS Creations' Kickin’ Mix
· 1 tsp kosher salt (or to taste)
· 1/2 tsp ground black pepper
· 1/4 cup fresh parsley, chopped
· Tip: Serve with shredded cheese, sour cream, and diced avocado for serving
Directions
1. In a large pot, heat the olive oil over medium heat. Add the onion and red pepper, and sauté for 4-5 minutes until softened
2. Add the garlic and cook for another minute until fragrant
3. Stir in HS Creations' Kickin’ Mix Blend, kosher salt, and black pepper
4. Add the broth, black beans, mixed vegetables, and meat (if using). Bring to a boil, then reduce heat and simmer for at least 20 minutes or longer
5. Stir in chopped parsley just before serving
6. Ladle the soup into bowls and top with shredded cheese, a dollop of sour cream, and diced avocado
7. Serve hot and enjoy a spicy, nourishing meal!
