About the Recipe

Ingredients
2–3 lb pork loin roast
2 TBSP olive oil
2 TBSP HS Creations Simply Versatile Blend
4 cloves garlic, peeled and smashed
1 TBSP Dijon mustard
1 TBSP apple cider vinegar
1 tsp black pepper
1/2 tsp smoked paprika (optional)
1 lb baby potatoes, halved
2 cups chopped carrots or green beans
Directions
Rub pork loin with olive oil, mustard, vinegar, and HS Creations Simply Versatile Blend. Let it marinate for 30 minutes (or overnight in the fridge).
Place garlic, potatoes, and veggies at the bottom. Pour in broth.
Lay the pork loin on top of the veggies. Sprinkle with black pepper and paprika.
Cover and cook on low for 6–7 hours or high for 3–4 hours, until pork is tender and internal temp reaches 145°F.
Let pork rest for 10 minutes before slicing. Serve with veggies and drizzle with juices from the pot.
