š Turkey & Stuffing Meatball Bites
Prep Time: 15 minutes
Cook Time: 25ā30 minutes, including gravy preparation
Yield: Approximately 24ā28 appetizer meatballs
Oven Temperature: 400°F
Ingredients ā Meatballs
* 1½ lbs ground turkey
* 1½ cups plain stuffing cubes, lightly crushed
* ½ cup celery, finely diced
* ½ cup yellow onion, finely diced
* 1 large egg
* ā cup chicken broth
* 1 TBSP HS Creations Poultry Solved! Blend
* 1 TBSP HS Creations Savory Stuffing Blend
* 2 TBSP unsalted butter
Step-by-Step Instructions
Step 1: Preheat the Oven
Preheat your oven to 400°F.
Line a large rimmed baking sheet with parchment paper or lightly grease it.
Step 2: SautƩ the Vegetables
In a medium skillet, melt 2 tablespoons unsalted butter over medium heat.
Add the finely diced celery and onion.
SautĆ© for approximately 4ā5 minutes, stirring occasionally, until softened and fragrant.
Remove from heat and allow to cool slightly.
Step 3: Prepare the Stuffing
Place the crushed stuffing cubes in a mixing bowl.
Pour ā cup chicken broth over the cubes and gently stir.
Allow the mixture to rest for approximately 3 minutes so the bread absorbs the liquid.
The stuffing should be moist but not swimming in broth.
Step 4: Combine the Ingredients
In a large mixing bowl, add:
* Ground turkey
* Moistened stuffing mixture
* SautƩed celery and onion
* Egg
* Poultry Solved! Blend
* Savory Stuffing Blend
Using clean hands or a large spoon, gently combine until evenly incorporated.
Avoid overmixing. Working the meat too aggressively can make the finished meatballs dense.
Step 5: Shape the Meatballs
Roll the mixture into approximately 24ā28 small, evenly sized meatballs.
Arrange them on the prepared baking sheet, leaving a little space between each one.
For consistent portions, use a small cookie scoop.
Step 6: Bake
Bake for approximately 20ā25 minutes, checking early for doneness.
Use an instant-read thermometer to confirm that the center of the meatballs reaches 165°F.
The exact cooking time depends on the size of your meatballs and your oven.
Remove from the oven and allow to rest briefly while you finish the gravy.

š„£ Homemade HS Creations Feelinā Gravy
Because whatās Thanksgiving without gravy?
And because these little meatballs deserve something better than being left to fend for themselves! š
This is our homemade gravy variation featuring Feelinā Gravy Blend.
Yield: Approximately 2 cups
Preparation Time: 5 minutes
Cooking Time: 8ā10 minutes
Gravy Ingredients
* 2 TBSP unsalted butter
* 2 TBSP all-purpose flour
* 2 cups low-sodium chicken or turkey broth
* 1ā2 tsp HS Creations Feelinā Gravy Blend
* Freshly ground black pepper, optional
Step-by-Step Gravy Instructions
Step 1: Melt the Butter
Place a medium saucepan over medium heat.
Add 2 tablespoons butter and allow it to melt completely.
Step 2: Create the Roux
Whisk in 2 tablespoons all-purpose flour.
Continue whisking for approximately 1ā2 minutes.
The mixture should become smooth and slightly golden.
This cooks away the raw flour taste and creates the foundation for a rich gravy.
Step 3: Add the Broth
Slowly pour in 2 cups low-sodium chicken or turkey broth, whisking continuously.
Adding the liquid gradually helps prevent lumps.
Continue whisking until the mixture is smooth.
Step 4: Add Feelinā Gravy Blend
Whisk in 1 teaspoon HS Creations Feelinā Gravy Blend.
Remember, this blend already contains beef bouillon and savory seasonings.
Start with less, taste, and adjust.
Step 5: Simmer
Reduce heat to medium-low.
Allow the gravy to simmer gently for approximately 5ā7 minutes, stirring frequently.
The gravy should thicken enough to coat the back of a spoon.
Step 6: Taste and Adjust
Taste the finished gravy.
For a stronger savory flavor, gradually add up to 1 additional teaspoon Feelinā Gravy Blend.
Add black pepper if desired.
Step 7: Serve
Transfer the warm gravy to a small serving bowl or gravy boat.
Arrange the meatballs on a platter with toothpicks.
Serve the gravy alongside for dipping.
And just like thatā¦

š§Ŗ The Organic Chemistās Kitchen Tips
1. Why Plain Stuffing Cubes?
Because weāre already using Poultry Solved! and Savory Stuffing!
Both blends contain carefully combined herbs and seasonings.
Using heavily seasoned stuffing could overpower the finished meatballs or make them too salty.
Plain stuffing gives us more control over the final flavor.
2. Want Thicker Dipping Gravy?
Increase the butter and flour to 3 tablespoons each while keeping the broth at 2 cups.
This creates a thicker gravy that clings beautifully to the meatballs.
3. Can I Make These Ahead?
Absolutely!
Prepare and shape the raw meatballs up to one day in advance.
Place them in a covered container or on a covered baking sheet and refrigerate at 40°F or below.
Bake when ready to serve.
You can also prepare the gravy ahead, refrigerate it promptly, and reheat thoroughly while whisking. Add a splash of broth if it becomes too thick.
4. What About Leftovers?
Refrigerate cooked meatballs and gravy within two hours of preparation.
Store in covered containers at 40°F or below and enjoy within 3ā4 days.
Reheat leftovers to 165°F.
5. Can I Serve These as Dinner?
Of course!
Skip the toothpicks and serve larger portions with:
* Creamy garlic mashed potatoes
* Roasted vegetables
* Green beans
* Cranberry sauce
* Additional warm gravy
Congratulations. Youāve turned an appetizer into Thanksgiving dinner without roasting a turkey!

š Why HS Creations Makes Holiday Cooking Easier
Hereās something Iāve always believed:
Great food shouldnāt have to be complicated.
Traditional holiday recipes often call for several individual herbs and spices.
A little garlic here. Some onion there. Sage, thyme, parsley, pepperā¦
And before you know it, your kitchen counter looks like youāve opened a seasoning warehouse! š
Thatās why I created HS Creations.
Not to make more seasonings.
I wanted to make better ones.
Our handcrafted, small-batch blends bring complementary ingredients together so home cooks can spend less time measuring and more time enjoying the people around their tables.
For this recipe, weāre using just three HS Creations blends to build flavor throughout the meatballs and gravy.
Simple ingredients. Thoughtful seasoning. Delicious results.
