🍄🍗 Creamy Chicken & Mushroom Bisque — The Organic Chemist Strikes Again!

Two HS Creations Blends. One Luxuriously Creamy Soup. Two Ways to Make It!

By Joanne G. Sakulich | Founder & Creator, HS Creations, LLC | The Organic Chemist

🧪 Welcome Back to The Organic Chemist’s Test Kitchen!

Remember those behind-the-scenes photographs I shared?

The mushrooms were sizzling. The onions were cooking. The chicken was shredded.

And somewhere between the butter, heavy cream, and Gruyère cheese, something absolutely delicious happened!

HS Creations Creamy Chicken & Mushroom Bisque was born! 🍄

Rich, velvety, savory, and packed with tender chicken and beautiful baby bella mushrooms.

The kind of soup that makes you close your eyes after the first spoonful.

And possibly reconsider sharing. 😂

But here’s what makes this recipe especially delicious…

I didn’t need half my spice cabinet to create those wonderful layers of flavor.

I used TWO HS Creations blends!

🌿 Paradise in Paris Blend — bringing beautiful herbaceous notes that complement the earthy mushrooms.

🧄 Must Be Garlic Blend — adding that savory, garlicky goodness that makes everything taste like you spent hours in the kitchen.

Two blends. One pot. A whole lot of flavor.

And yes, I made this soup myself!

📸 REAL FOOD. REAL KITCHEN. REAL PHOTOGRAPHS!

The original cooking photographs featured here are from my own kitchen.

No stock photography. No AI-generated soup.

Just actual ingredients, actual cooking, and one very happy Organic Chemist! 😂

🍗 My Favorite Time-Saving Kitchen Trick

Let’s talk about chicken.

Could you cook chicken breasts from scratch, let them rest, and shred them?

Absolutely!

But do you HAVE to?

NOPE! 😂

One of my favorite shortcuts is using already-cooked shredded chicken.

Leftover roasted chicken? Perfect.

Rotisserie chicken from the grocery store? Even better! Not my choice, but it’s quick!

You skip an entire cooking step without sacrificing the wonderful homemade flavor of the soup.

And because we’re adding the chicken toward the end, it stays tender instead of spending the entire cooking process simmering away.

Less prep. Less cooking. More time to enjoy dinner!

Now THAT is kitchen chemistry I can appreciate! 🧪

🍄 HS Creations Creamy Chicken & Mushroom Bisque

Preparation Time: 10–15 minutes

Stovetop Cooking Time: Approximately 30–35 minutes

Crock-Pot Cooking Time: LOW 3–4 hours or HIGH 1½–2 hours, plus finishing time

Servings: 4 generous bowls

🛒 Ingredients

  • 1–2 cups already-cooked, shredded chicken

  • 1 lb fresh baby bella mushrooms, sliced

  • 1 medium yellow onion, finely diced

  • 3 TBSP unsalted butter

  • 1 TBSP olive oil

  • 3 TBSP all-purpose flour

  • 3 cups chicken broth

  • 1 cup heavy cream

  • ½ cup freshly grated Gruyère cheese (optional, but delicious!)

  • 1 TBSP HS Creations Paradise in Paris Blend

  • 1 tsp HS Creations Must Be Garlic Blend

  • ¼ cup dry white wine (optional)

  • Freshly ground black pepper, to taste

  • Fresh scallions, chopped, for garnish

The Organic Chemist’s Note: I used heavy cream for this recipe because I wanted a rich, velvety finish. This is comfort food, not a negotiation with my taste buds! 😂

👩‍🍳 Method 1: Stovetop — The Original Test Kitchen Recipe

Step 1: Brown Those Beautiful Mushrooms!

Heat a large, heavy-bottomed pot or Dutch oven over medium-high heat.

Add:

  • 3 TBSP unsalted butter

  • 1 TBSP olive oil

Once the butter melts, add the sliced baby bella mushrooms.

Cook for approximately 8–10 minutes, stirring occasionally.

At first, the mushrooms will release moisture. Keep cooking until most of that liquid evaporates and the mushrooms begin developing a beautiful golden-brown color.

This step is important!

Browning develops the deep, earthy flavor that gives mushroom bisque its character.

Don’t rush the mushrooms. They have important work to do! 😂

For a beautiful presentation, reserve a few browned mushrooms for garnish.

Step 2: Build the Aromatic Base

Reduce heat to medium.

Add the diced yellow onion to the mushrooms.

Cook for approximately 4–5 minutes, stirring occasionally, until softened and translucent.

The onions will absorb those wonderful buttery mushroom flavors.

Your kitchen should already be smelling pretty spectacular!

Step 3: Deglaze the Pot (Optional)

If using white wine, pour in ¼ cup.

Stir gently, scraping the browned bits from the bottom of the pot.

Allow the wine to simmer for approximately 1–2 minutes, until reduced by about half.

Those browned bits contain wonderful concentrated flavor.

No wine? No problem!

Use a splash of your measured chicken broth instead.

Step 4: Create the Thickening Base

Sprinkle 3 TBSP all-purpose flour evenly over the mushroom and onion mixture.

Stir continuously for approximately 2 minutes.

The flour should coat the vegetables and absorb the remaining butter.

Slowly pour in the 3 cups chicken broth, a little at a time, stirring constantly.

This helps prevent lumps and creates a smooth, thickening soup base.

Bring the mixture to a gentle simmer.

Step 5: Bring in the HS Creations Magic!

Now for my favorite part! 🧪

Add:

🌿 1 TBSP HS Creations Paradise in Paris Blend

🧄 1 tsp HS Creations Must Be Garlic Blend

Stir thoroughly to distribute the seasonings throughout the broth.

Reduce heat to medium-low and simmer gently for approximately 10 minutes, stirring occasionally.

The mushrooms, onions, broth, and seasonings will begin developing a wonderfully savory flavor.

Taste before adding any additional salt, since the broth and seasoning blends may already provide enough.

Step 6: Choose Your Bisque Texture

This is where you get to decide what kind of soup personality you’re working with! 😂

Option A: Rustic & Chunky

Leave the mushrooms whole or sliced.

You’ll have a hearty bisque with plenty of texture.

Option B: Silky & Velvety

Carefully remove approximately 1–2 cups of the mushroom mixture with some broth.

Blend until smooth using an immersion blender or a heat-safe blender.

If using a countertop blender, work in small batches and allow steam to escape safely.

Return the blended mixture to the pot.

This creates a creamier texture while preserving some of those delicious mushroom

pieces.

My preference? A combination of creamy broth and recognizable mushrooms!

I want to know there are mushrooms in my mushroom soup! 😂

Step 7: Add the Heavy Cream & Chicken

Reduce heat to LOW.

Slowly stir in:

  • 1 cup heavy cream

  • 1–2 cups already-cooked shredded chicken

Stir gently until everything is combined.

Continue heating for approximately 5 minutes, or until the chicken is thoroughly heated to 165°F.

Avoid bringing the soup to a rolling boil.

The goal is a smooth, luxurious finish.

Not a science experiment involving separated dairy! 😂

Step 8: The Gruyère Moment!

Turn off the heat.

If using Gruyère, gradually add the ½ cup freshly grated cheese while stirring.

Continue stirring until melted and incorporated into the creamy broth.

Gruyère contributes a wonderful nutty, savory richness that complements the mushrooms beautifully.

If the soup becomes thicker than you prefer, add a small splash of warm chicken broth.

Taste and adjust with freshly ground black pepper as needed.

Step 9: Garnish & Serve!

Ladle the bisque into warm bowls.

Top with:

  • Reserved sautéed mushrooms

  • Freshly chopped scallions

  • A little freshly ground black pepper

Serve with crusty bread, toasted baguette slices, or warm garlic bread.

And if you’re anything like me…

You’ll want the bread AND the spoon! 😂🥖

🍲 Method 2: Crock-Pot Creamy Chicken & Mushroom Bisque

Same Delicious Ingredients. Less Babysitting!

Yes, you can absolutely make this soup in your slow cooker!

Perfect for chilly afternoons, busy schedules, or those days when you’d rather let dinner take care of itself.

Use the same ingredient quantities listed above.

Step 1: Brown the Mushrooms

For the best flavor, heat the butter and olive oil in a skillet over medium-high heat.

Add mushrooms and cook for 8–10 minutes until golden.

Add diced onion and cook another 4–5 minutes.

This step is optional, but I recommend it.

The browning adds a depth of flavor that you won’t get from simply placing raw mushrooms into the slow cooker.

Step 2: Fill the Crock-Pot

Transfer the mushroom and onion mixture to your slow cooker.

Add:

  • 3 cups chicken broth

  • 1 TBSP Paradise in Paris Blend

  • 1 tsp Must Be Garlic Blend

  • ¼ cup white wine, if using

Stir gently.

Do not add the heavy cream, cheese, flour, or cooked shredded chicken yet.

Step 3: Let the Slow Cooker Work!

Cover and cook:

LOW: 3–4 hours

HIGH: 1½–2 hours

The mushrooms should be tender and the broth fragrant.

Step 4: Thicken the Bisque

In a small bowl, whisk together:

  • 3 TBSP all-purpose flour

  • ¼ cup cold water

Whisk until completely smooth.

Slowly stir the mixture into the hot soup.

Cover and cook on HIGH for approximately 20–30 minutes, or until the soup thickens and the flour is fully cooked.

If desired, blend a portion of the mushroom mixture for a silkier texture before adding the cream.

Step 5: Add the Chicken & Heavy Cream

Stir in:

  • 1–2 cups cooked shredded chicken

  • 1 cup heavy cream

Cover and heat gently for approximately 15–20 minutes, or until the chicken reaches 165°F.

Avoid prolonged boiling or overheating.

Step 6: Finish with Gruyère

Turn the slow cooker to WARM or OFF.

Gradually stir in the grated Gruyère, if using, until melted.

Taste and adjust seasoning.

Garnish with chopped scallions and reserved sautéed mushrooms.

And there you have it!

A rich, comforting, homemade bisque without standing over the stove! 😂

🧪 The Organic Chemist’s Tips for the Perfect Bisque

🍄 1. Don’t Crowd the Mushrooms

If your skillet is small, brown the mushrooms in batches.

Crowding causes them to steam rather than brown.

And we want beautiful, golden mushrooms!

🥛 2. Heavy Cream Makes a Difference

Heavy cream gives this bisque its luxurious texture.

Add it toward the end of cooking and heat gently.

🍗 3. Use Cooked Shredded Chicken

This is one of the easiest ways to save time.

Leftovers and rotisserie chicken work beautifully.

🧀 4. Freshly Grate Your Gruyère

Freshly grated cheese generally melts more smoothly than packaged pre-shredded cheese.

Add it gradually with the heat turned off.

🍲 5. Adjust the Thickness

Want a thicker bisque?

Blend more of the mushroom mixture.

Want it slightly thinner?

Add warm chicken broth, a little at a time.

❄️ 6. Save the Leftovers

Refrigerate promptly in shallow, airtight containers and enjoy within 3–4 days.

Reheat gently until thoroughly hot, stirring occasionally.

Cream-based soups may change texture when frozen, so refrigeration is my preference.

🌿 Why TWO HS Creations Blends?

Here’s where The Organic Chemist gets excited!

Traditional mushroom soup recipes often call for several individual seasonings.

Garlic. Herbs. Pepper. And whatever else you find hiding in the back of your spice cabinet!

But I wanted a simpler approach.

Enter Paradise in Paris and Must Be Garlic!

🌿 HS Creations Paradise in Paris Blend

Brings beautiful herbaceous flavor that complements earthy mushrooms, savory chicken, and creamy sauces.

And it’s not just for soup!

Try it with chicken, roasted vegetables, potatoes, or buttery sauces.

🧄 HS Creations Must Be Garlic Blend

Adds savory garlic flavor that works beautifully in soups, sauces, roasted potatoes, vegetables, and countless everyday dishes.

Together, these two blends create layers of flavor without requiring you to measure a dozen individual seasonings.

TWO BLENDS. ONE INCREDIBLE BOWL.

And two tins you’ll find yourself reaching for long after the soup is gone! 😂

🍄 The Organic Chemist’s Final Verdict

Rich? Absolutely.

Creamy? You bet.

Loaded with mushrooms and tender chicken? YES!

Complicated?

NOT IN THIS KITCHEN! 😂

Whether you make it on the stovetop or let your Crock-Pot handle the work, this is the kind of homemade comfort food that makes an ordinary evening feel special.

And with HS Creations Paradise in Paris and Must Be Garlic doing the seasoning?

You’ve got flavor covered.

Because my philosophy has always been simple:

I didn’t want to make more seasonings. I wanted to make better ones.

And great food shouldn’t have to be complicated.
