8 cut up chicken pieces
8 medium potatoes, peeled and quartered
Baharat Blend (start 1 TBSP; season to taste)
½ cup extra virgin olive oil
1 cup of lemon juice
1 Lemon
Preparation
Instructions
· Preheat oven to 425 degrees F (220 degrees C).
· Place chicken and potatoes in a large baking dish.
· In a bowl, stir together Baharat Blend, olive oil, and lemon juice. Pour over chicken and potatoes.
· Slice up lemon and put on or around the chicken
· Cover dish with foil.
· Bake in preheated oven for 30 minutes. Remove foil, increase heat to 475 degrees F (245 degrees C), and cook until chicken and potatoes are golden, about 30 minutes.
Other use: Use it as a marinade – add oil, wine, or citrus). Use it as a dry rub with steaks or chops. Use it as a flavor enhancer – great with vegetables and even better rice or grain dishes.
